
Banana bread with spices and honey
The combination of honey, warm spices, and sweet bananas creates this flavorful and very moist bread that stays fresh for several days – if it isn't eaten right away! The olive oil gives the bread its moist crumb. This recipe does not meet the Whole Grain Logo requirements, but it is an opportunity to include more whole grains in everyday meals.
Ingredients
- 3 ripe bananas
- 75 g olive oil
- 160 g honey
- 2 egg
- 50 g Finely rolled oats
- 1 tsp cinnamon
- 1 tsp cardamom
- 1 tsp dried ginger
- 1 tsp vanilla powder or vanilla sugar
- 1 dl milk
- 120 g wheat flour
- 70 g Whole wheat flour
- 2 tsp baking powder
- Powdered sugar for decoration
Instructions
- Set the oven to 160 degrees Celsius conventional heat, or alternatively 150 degrees Celsius with fan.
- Mash two of the bananas well – save the last one to place on top of the bread.
- Whisk together olive oil, honey, banana, and eggs until fluffy. Stir in the oats, spices, and milk.
- Fold the flour with the baking powder and gently incorporate it into the dough. Grease a loaf pan or line it with parchment paper.
- Transfer the dough into the pan and halve the last banana, pressing it down into the bread so that it is still visible.
- Bake for 45-60 minutes on the lower rack, keeping an eye on it along the way.
- Let the banana bread cool and dust with powdered sugar before serving.
