
Eggs and shrimp with green mayonnaise
A classic open-faced sandwich you can't go wrong with! This is also an opportunity to make your own homemade mayonnaise – it's easier than you think. If you're short on time, you can use a store-bought version. The recipe doesn't meet the whole grain logo standards, but it’s a great way to incorporate more whole grains into your daily routine. The recipe was developed by Jesper Panorama for Salling in connection with the Open-Faced Sandwich Week.
Ingredients
- 4 Slices Whole grain logo-marked rye bread
- 1 dl Mayonnaise – alternatively, make it yourself
- The zest of an organic lemon
- 1 small bag mixed salad
- 3-4 dl shrimp
- 4 soft-boiled eggs
- 1 small pot chives
- 6-8 Slices radish
Homemade mayonnaise
- 2 egg yolks
- 1 pinch Dijon mustard
- 1-2 tsp white wine vinegar
- 1 tsp salt
- 1 1/2 dl neutral-tasting oil, such as sunflower oil
Instructions
Mayonnaise
- If you want a beautiful green mayonnaise, blend 1 tablespoon of chopped chives with the oil before using it for the mayonnaise.
- Make sure that the eggs and oil are at the same temperature.
- Pour all the ingredients into a blender jar.
- Blend all the ingredients together with an immersion blender by placing the blender all the way at the bottom of the jar, then gently lift it up. Start blending while keeping the immersion blender still at the bottom. After a short time, you'll see the mayonnaise begin to thicken. Now you can slowly lift the blender up to achieve a nice, thick consistency. You may lift and lower the blender a couple of times if needed.
Open-faced sandwich
- Boil the eggs for 7 minutes in lightly salted water.
- Peel the eggs.
- Mix the mayonnaise with the zest of a grated lemon.
- Carefully cut off the top of the egg, about 1/3 down from the top.
- Chop the chives finely.
- Spread the bread with butter, and place a small handful of salad on top.
- Next, distribute a small deciliter of shrimp on each slice of bread.
- In the center, gently push the shrimp outwards to create a small indentation.
- In the indentation, place a generous teaspoon of mayonnaise, and then carefully place the egg in it.
- Garnish with slices of radish and dill.
