A lovely, fresh, and inviting recipe for beautiful green waffles that can be enjoyed at any meal of the day. The waffles can easily be made in larger batches, frozen, and taken out as needed. The toppings can also be varied to suit your taste.
The recipe does not meet the requirements for the whole grain label, but it is a way to include more whole grains in your everyday diet.

Ingredients 

Waffles

  • 75 g fresh spinach
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1 dl milk
  • 3 egg
  • 100 g whole grain flour
  • 50 g wheat flour
  • A bit of oil or butter for the waffle maker

Topping

  • Smoked halibut
  • 1/2 cucumber
  • 1 apple
  • Cottage cheese
  • Lemon
  • dill
  • pepper
  • Lettuce

Instructions 

  • Pour all the ingredients into a blender and blend until the spinach is completely pureed and the batter is smooth.
  • Add a little butter or oil to the waffle iron and cook 4 large waffles until done and light brown at the edges.
  • Finely slice the cucumber, avocado, and apple, and mix together with a little lemon juice, chopped dill, and pepper.
  • Top the waffles with halibut, cottage cheese, and, if desired, lamb’s lettuce and the vegetable mixture.
