
Baked oatmeal with blueberries, banana, and almonds
This recipe doesn't meet the whole grain logo requirements, but it's an opportunity to incorporate more whole grains into your daily routine.
Ingredients
- 1 banana
- 1 handful blueberries
- 2-3 tbsp oats
- 1 tbsp coconut flour or shredded coconut
- ½ tsp vanilla or cinnamon
- 1 handful almonds nuts or seeds
- 1-2 tsp honey or syrup
- 1 tbsp oil or melted butter
- 2 egg
- 1 dl milk
Equipment
- 1 rye bread loaf pan about 1 liter
Instructions
- Preheat the oven to 170 degrees Celsius.
- Slice the banana and arrange it at the bottom of your loaf pan. Then add the blueberries.
- Pour 2-3 tbsp of oats into a bowl. Add 1 tbsp of coconut flour or shredded coconut. Then add cinnamon or vanilla, followed by almonds, nuts, or seeds.
- Stir the mixture in the bowl and spread it over the fruit.
- Add a little honey or syrup and about 1 tablespoon of oil or melted butter.
- Whisk 2 eggs together with the milk and pour it over the fruit and muesli.
- Bake for 25 minutes.
Tip
- The oatmeal can be eaten with yogurt, skyr, or just as it is. It can be enjoyed cold or warm.
