Baked oatmeal with blueberries, banana, and almonds

This recipe doesn't meet the whole grain logo requirements, but it's an opportunity to incorporate more whole grains into your daily routine.

Ingredients 

  • 1 banana
  • 1 handful blueberries
  • 2-3 tbsp oats
  • 1 tbsp coconut flour or shredded coconut
  • ½ tsp vanilla or cinnamon
  • 1 handful almonds nuts or seeds
  • 1-2 tsp honey or syrup
  • 1 tbsp oil or melted butter
  • 2 egg
  • 1 dl milk

Equipment

  • 1 rye bread loaf pan about 1 liter

Instructions 

  • Preheat the oven to 170 degrees Celsius.
  • Slice the banana and arrange it at the bottom of your loaf pan. Then add the blueberries.
  • Pour 2-3 tbsp of oats into a bowl. Add 1 tbsp of coconut flour or shredded coconut. Then add cinnamon or vanilla, followed by almonds, nuts, or seeds.
  • Stir the mixture in the bowl and spread it over the fruit.
  • Add a little honey or syrup and about 1 tablespoon of oil or melted butter.
  • Whisk 2 eggs together with the milk and pour it over the fruit and muesli.
  • Bake for 25 minutes.

Tip

  • The oatmeal can be eaten with yogurt, skyr, or just as it is. It can be enjoyed cold or warm.
