
Buddha bowl
This recipe meets the Whole Grain Logo requirements.
Ingredients
- 50 g spelt kernels raw weight
- 80 g sweet potatoes
- ½ tsp olive oil
- 40 g salat
- 50 g avocado
- 1 clove garlic
- 1 tsp creme fraiche 5%
- 80 g edamame beans
- 80 g cherry tomatoes
- 50 g hot-smoked salmon
- 100 g mango
- 80 g chickpeas cooked/from a can
Instructions
- Cook the spelt kernels according to the instructions on the package.
- Bake the sweet potatoes with a little oil in the oven at 200°C until they are tender.
- Arrange the salad at the bottom of a bowl.
- Make a guacamole by mixing avocado, garlic, and creme fraiche.
- Arrange the remaining ingredients on top of the salad in small portions.
Tip
- You can vary the dish with the leftovers you have in the fridge, such as chicken and other vegetables.
