Mini burger buns

  • 500 g cold tap water
  • 20 g yeast
  • 6 g salt
  • 50 g oats
  • 55 g rye kernels e.g. popped
  • 200 g whole grain flour e.g. white wheat
  • 275 g wheat flour
  • Sesame for topping

Lentil patties

  • 200 g red lentils
  • 1 onion or red onion
  • 2 cloves garlic
  • 1 tsp. paprika
  • 1 tsp. thyme
  • 2 egg
  • 50 g whole wheat flour or oats
  • 100 g mozzarella
  • Salt and pepper

Tomato salsa

  • 4 big tomatoes
  • 2 bell peppers
  • 2 cloves garlic
  • 1 tbsp. olive oil
  • 1 tsp. red wine vinegar
  • 1 a pinch of salt and pepper

Burger filling

  • 1 pack pre-made hummus
  • 1 pack salad

Instructions

Burger buns

  • Dissolve the yeast and salt in the water.
  • Then stir the oats and rye kernels into the water.
  • Now add the flour and knead the dough thoroughly until it comes together.
  • Fold the dough and let it rise, covered, for about 1 hour until it has doubled in size.
  • Preheat the oven to 220°C. Gently turn the dough out onto a lightly floured surface and shape 16–20 burger buns.
  • Optionally, use baking rings or metal rings for a uniform shape. Once the burger buns are formed, roll them in sesame seeds.
  • Let the buns rise for about 30 minutes until they’ve puffed up slightly.
  • Bake the buns in the middle of the oven until they are light brown – about 10–15 minutes.

Lentil patties

  • Rinse the red lentils thoroughly in a sieve.
  • Heat a pot with plenty of water and add the lentils along with a pinch of salt.
  • Cook the lentils until tender, about 10 minutes – they should be soft but still hold their shape.
  • Let the lentils drain completely, then mix them in a bowl with eggs, flour, cheese, and spices.
  • If the batter is very wet, you can add a little extra flour or oats.
  • Shape the mixture into lentil patties and fry them on both sides over medium heat until they are lightly browned.

Tomato salsa

  • Dice the tomatoes and place them in a bowl.
  • Skær peberfrugter i små tern og hak jalapenos, inden de tilføjes til skålen med tomaterne.
  • Dice the bell peppers and chop the jalapeños, then add them to the bowl with the tomatoes.
  • Season the tomato salsa with salt and pepper.

Serving

  • Spread hummus on the buns and assemble with the lentil patties, tomato salsa, and romaine lettuce.
