
Muesli bar with oats
In celebration of Whole Grain Day 2023 with the theme of oats, you can try this sweet and tangy muesli bar recipe. However, this recipe does not meet the whole grain logo. A small snack that is perfect to take on the go and for spontaneous hunger.
Ingredients
- 100 g Hazelnuts coarsely chopped
- 100 g Cranberries
- 75 g Dried apples coarsely chopped
- 50 g coconut flour
- 50 g oats
- 50 g pumpkin seeds
- 50 g sesame seeds
- 1½ dl Peanut butter
- ½ dl water
- 1½ dl honey
Instructions
- Mix all the dry ingredients together in a suitable bowl.
- Place the honey and peanut butter in a small pot along with the water and let it simmer for two minutes.
- Pour it over the dry ingredients and mix it well together.
- Line a small baking tray (18 x 24 cm) with parchment paper.
- Spread the mixture in the pan and gently press it together so that the mixture is even and compact (IMPORTANT!).
- Bake it in the oven at 150°C for about 25 minutes until the surface is beautifully golden.
- Carefully turn it out onto a cooling rack and let it cool completely before cutting it into 20 sticks.
Tip
- Wrap the cooled, crispy muesli bars in lunch paper so they're ready for a picnic trip to the grain fields with a thermos of coffee under your arm.
- Grab a muesli bar on the go as an energy-packed snack.
- This recipe doesn't meet the whole grain logo, but it is an option to incorporate more whole grains into everyday life.
