
Burger with lentil patty and beetroot hummus
This vegetarian burger gives beef a run for its money! Together with fresh tomato, lettuce, and the flavorful beetroot hummus, you get a truly delicious burger. The recipe meets the Whole Grain Logo requirements
Ingredients
- 6 Whole grain labeled burger buns
- 200 grams red lentils
- 1 onion, optionally red onion
- 2 clove garlic
- 1 tsp paprika
- 1 tsp thyme
- 2 egg
- 50 grams whole wheat flour or rolled oats
- 100 grams Keyhole-labeled mozzarella
- Salt and pepper
- 50 grams Pickled red onions – homemade or store-bought
- 1 pack lamb's lettuce (100 grams)
Beetroot hummus (can also be bought pre-made in some places)
- 1 pack store-bought hummus (approx. 200 grams)
- 1/2 beetroot
Instructions
- Rinse the red lentils thoroughly in a sieve. Heat a pot with plenty of water and add the lentils along with a pinch of salt.
- The lentils should be cooked until tender, about 10 minutes – they should be soft but still hold their shape.
- Let the lentils drain completely, then mix them in a bowl with egg, flour, cheese, and spices.
- If the mixture is very wet, you can add a bit of extra flour or rolled oats.
- Shape the mixture into lentil patties and fry on both sides over medium heat until they have gained some color.
- Wash and peel the beetroot and boil until tender
- Blend the beetroot with hummus until smooth and creamy.
- Warm the burger buns in the oven. Spread the bun with beetroot hummus and add the lentil patty, lettuce, and red onions.
