Ingredients

Buns

  • 2 dl milk
  • 20 g yeast
  • 75 g Marzipan
  • 1 egg
  • 1 spsk. sugar
  • 1,5 tsk. cinnamon
  • 1,5 tsk. cardamom
  • 1/2 Grated apple
  • 250 g wheat flour
  • 150 g Grated apple
  • 1 tsk. salt
  • 100 g soft butter

Sprinkle

  • 1 Beaten egg for brushing
  • Hazelnut flakes
  • Cinnamon sugar or pearl sugar

Instructions

  • Warm the milk until it is lukewarm (finger warm) in a small saucepan. Pour the milk into a bowl and dissolve the yeast in the milk.
  • Roughly grate the marzipan and the apple, and add them to the milk along with the egg, sugar, cinnamon, cardamom, and salt.
  • Stir well, then add the two types of flour and knead thoroughly, either on the kitchen counter or preferably in a stand mixer.
  • Add the soft butter and knead the dough thoroughly for 8–10 minutes, until it is smooth and elastic.
  • Cover the bowl with a damp tea towel and let the dough rise in a warm place for about an hour.
  • Take a baking pan and line it with baking paper. Divide the dough into 12 pieces and shape them into round buns. Place the buns in the pan and let them rise, covered, for 45–60 minutes.
  • Preheat the oven to 200°C (390°F) and brush the buns with egg. Sprinkle hazelnut flakes and sugar over the buns. Bake the buns for about 15–20 minutes and let them cool.
  • Tip: If you want the Christmas buns in kid-friendly sizes, you can use a larger baking tray and shape 24 small buns instead. Alternatively, you can remove a couple of handfuls of dough before shaping 12 buns for the pan. This way, you can bake 12 smaller buns in the pan and bake some extra buns on a baking tray beside it.
