A crisp and fresh pointed cabbage salad with sweetness from apple. The wheat kernels add great flavor and texture and give the salad a whole-grain boost. This recipe meets the whole grain label requirements.

Ingredients
- 1 pointed cabbage small
- 2 apples
- 30 g pomegranate seeds peeled
- 40 g toasted pumpkin seeds or almonds
- 1 pack lettuce
- 2 dl wheat kernels
mustard vinaigrette
- 1 dl olive oil
- 1 tsp. honey
- 1 tsp. mustard
- 1/2 lemon juice
- A bit of salt and pepper
Instructions
- Cook the wheat kernels according to the instructions on the package and let them cool, optionally on a baking sheet or a kitchen towel, so the moisture can evaporate.
- Lightly toast the pumpkin seeds/nuts in a pan.
- Slice the pointed cabbage thinly and, if desired, chop further so it’s very fine.
- Cut the apples into small bite-sized pieces, rinse the lamb’s lettuce, and then toss all the ingredients together in a salad bowl.
Dressing
- Toss all the ingredients in a bowl and whisk until smooth. Pour over the salad and serve immediately.
- Tip: You can use wheat kernels, whole-grain bulgur, or oat rice in this recipe.
