Pointed cabbage salad with wheat berries and apples

A crisp and fresh pointed cabbage salad with sweetness from apple. The wheat kernels add great flavor and texture and give the salad a whole-grain boost. This recipe meets the whole grain label requirements.

Ingredients 

  • 1 pointed cabbage small
  • 2 apples
  • 30 g pomegranate seeds peeled
  • 40 g toasted pumpkin seeds or almonds
  • 1 pack lettuce
  • 2 dl wheat kernels

mustard vinaigrette

  • 1 dl olive oil
  • 1 tsp. honey
  • 1 tsp. mustard
  • 1/2 lemon juice
  • A bit of salt and pepper

Instructions 

  • Cook the wheat kernels according to the instructions on the package and let them cool, optionally on a baking sheet or a kitchen towel, so the moisture can evaporate.
  • Lightly toast the pumpkin seeds/nuts in a pan.
  • Slice the pointed cabbage thinly and, if desired, chop further so it’s very fine.
  • Cut the apples into small bite-sized pieces, rinse the lamb’s lettuce, and then toss all the ingredients together in a salad bowl.

Dressing

  • Toss all the ingredients in a bowl and whisk until smooth. Pour over the salad and serve immediately.
  • Tip: You can use wheat kernels, whole-grain bulgur, or oat rice in this recipe.
