Whole grain bruschetta

If you have any stale bread, it's perfect for bruschetta. Bruschetta can be varied endlessly, but here we serve the classic version with tomato.
This recipe meets the Whole Grain Logo requirements.

Ingredients 

  • 200 g whole grain logo marked baguettes or leftovers of a good whole grain bread
  • 300 g ripe tomatoes
  • 4-6 stems flat-leaf parsley
  • 15 g grated Parmesan cheese
  • 1 clove garlic
  • pepper

Instructions 

  • Cut the bread into 4 thick slices and toast them.
  • Chop the tomatoes and parsley. Mix the tomatoes with the parsley and grated Parmesan cheese, and season with pepper to taste.
  • Crush the garlic lightly and rub it on the bread. Top the bread with the tomatoes.

Tip

  • Whole grains can be beneficially included in several of the day's meals. In this dish, you get whole grains in the form of whole wheat kernels.
  • Give the stale bread, which might have become a bit dry, new life with this recipe.
  • Leftover parsley can be collected and stored in the freezer to be used as a flavoring for a soup.
