
Savoy cabbage salad with wheat kernels, mango, and pears
This exciting savoy cabbage salad will delight your guests! The wheat kernels help to add substance, while the pears and mango provide a lovely sweetness. We brighten up the salad with fresh spring onions and mint, and it's ready to go. This recipe doesn't meet the whole grain logo standards but is a great way to incorporate more whole grains into your daily meals.
Ingredients
- 1 large pointed cabbage
- 2 spring onions
- 100 g cracked wheat kernels
- 1 dl walnut kernels
- 100 g dried sweet mango
- 2 pears
- 1 handful of fresh mint
Dressing
- 1 tbsp creamy balsamic vinegar
- 1-2 tbsp olive oil
- Salt and pepper
Instructions
- Pour boiling water over the cracked wheat kernels so that the water covers the kernels. Let them steep for 30–40 minutes.
- Slice the savoy cabbage, spring onions, sweet mango, and pears, and toss them together.
- Top with chopped walnut kernels and fresh mint.
- Mix the balsamic vinegar, olive oil, salt, and pepper together, and drizzle over the salad just before serving.
- Tip: Cracked wheat kernels can be replaced with cracked rye kernels. The cabbage salad can be endlessly varied, so use whatever you have in your pantry; almonds, blueberries, apples, parsley, etc.
