Whole grain pizza rolls

pizzas rolls are always a hit in lunch boxes, for picnics, or just as a cozy snack. you can freeze them and thaw them as needed. this recipe doesn't meet the whole grain logo, but it is an option to incorporate more whole grains into everyday life.

Ingredients 

Dough

  • 50 g Yeast
  • 3 dl water
  • 2 tbsp Oil
  • 200 g Whole grain logo branded wheat flour
  • 300 g the whole grain logo durum wheat

Filling

  • ½ tsp salt
  • Peber
  • 1 clove garlic pressed
  • 100 g ham or chicken strips. you can also make one without meat and with sun-dried tomatoes.
  • 1 bell pepper
  • 1 Small onion
  • 100 g mozzarella cheese grated
  • 1 egg
  • 1 can chopped tomatoes

Instructions 

  • Dissolve the yeast in the lukewarm water. add salt and oil, then gradually add the flour – first stir with a spoon, then knead the dough well on a floured surface. roll out the dough to about 40 x 20 cm. make sure the dough has plenty of flour underneath.
  • Turn on the oven to 200 degrees convection and let the dough rise for about 20-30 minutes.
  • Prepare the filling by mixing mashed tomatoes, salt, pepper, and garlic together. Chop the bell pepper and onion.
  • The mashed tomatoes are spread out in a thin layer on the dough, then the onion, bell pepper, and ham are spread on the dough. Finally, sprinkle with oregano.
  • Roll the dough into a roulade and cut out about 20 rolls. Place the rolls on a baking tray lined with parchment paper. The dough is very wet and can be difficult to transfer to the baking tray, but it makes the rolls wonderfully juicy.
  • Press the rolls together so the filling doesn’t fall out during baking, and brush with egg. Sprinkle with mozzarella and bake the rolls for about 20 minutes, until the cheese has melted and the rolls are golden brown at the edges.
