Whole grain wraps with spiced bean filling

Ingredients 

Bean filling

  • 200 g dried beans e.g., black-eyed beans or white beans
  • 1 clove garlic
  • ½ tsp lemon juice from it
  • ½ tsp coarse salt
  • ¼ tsp cumin
  • 1 tsp paprika
  • ½ dl water
  • 1 tbsp cold-pressed rapeseed oil

Vegetable filling

  • ½ cucumber
  • 2 carrots
  • 1 bell pepper
  • 1 heart lettuce
  • 2 handfuls tender spinach leaves
  • 1 handful sun-dried tomatoes

Instructions 

Bean filling

  • Soak the beans for 8 hours.
  • Cook the beans according to the instructions on the package.
  • Afterward, let them cool and blend with the remaining ingredients.
  • Adjust the flavor with spices, lemon, and garlic to taste.
  • Wash the vegetables and cut them into long, thin strips, then distribute them on top of the bean filling in the wraps.
  • Cut the sun-dried tomatoes into smaller pieces and also distribute them in the wraps.
  • Roll up the wraps – they’re ready to take with you for lunch!

Tip

  • Use the vegetables you have or like best for the wraps. The bean filling is also delicious as a spread in a whole grain sandwich.
