
Whole grain wraps with spiced bean filling
This recipe meets the Whole Grain Logo requirements.
Ingredients
Bean filling
- 200 g dried beans e.g., black-eyed beans or white beans
- 1 clove garlic
- ½ tsp lemon juice from it
- ½ tsp coarse salt
- ¼ tsp cumin
- 1 tsp paprika
- ½ dl water
- 1 tbsp cold-pressed rapeseed oil
Vegetable filling
- ½ cucumber
- 2 carrots
- 1 bell pepper
- 1 heart lettuce
- 2 handfuls tender spinach leaves
- 1 handful sun-dried tomatoes
Instructions
Bean filling
- Soak the beans for 8 hours.
- Cook the beans according to the instructions on the package.
- Afterward, let them cool and blend with the remaining ingredients.
- Adjust the flavor with spices, lemon, and garlic to taste.
- Wash the vegetables and cut them into long, thin strips, then distribute them on top of the bean filling in the wraps.
- Cut the sun-dried tomatoes into smaller pieces and also distribute them in the wraps.
- Roll up the wraps – they’re ready to take with you for lunch!
Tip
- Use the vegetables you have or like best for the wraps. The bean filling is also delicious as a spread in a whole grain sandwich.
