This salad works really well for lunch boxes, and you can easily prepare a larger batch to have enough for several days.This recipe meets the whole grain label requirements.

Salad
- 3 dl whole grain bulgur or whole grain couscous
- 300 g green kale
- 1/2 orange
- 1/2 cucumber
- 1 handful fresh mint
- 1 handful almonds
- 1 handful pomegranate seeds
Dressing
- 1 tbsp. creme fraiche
- 3 tbsp. olive oil
- 1 cloves pressed garlic
- 1/2 tsp. honey
- 1/2 tsp. salt
- Pepper
Instructions
- Cook the bulgur or couscous according to the package instructions and let it cool.
- Lightly toast the almonds in a pan or in the oven and let them cool, then chop them coarsely.
- Wash and finely shred the cabbage. Cut the orange and cucumber into small pieces.
- Toss the cabbage, orange, and cucumber with the bulgur/couscous, mint, pomegranate seeds, and finally the toasted almonds.
- Make the dressing by combining all the ingredients in a small bowl or jar and stirring or shaking well. Pour the dressing over the salad just before serving.
