Bulgur salad with cabbage, oranges, mint, and almonds

This salad works really well for lunch boxes, and you can easily prepare a larger batch to have enough for several days.
This recipe meets the whole grain label requirements.

Ingredients 

Salad

  • 3 dl whole grain bulgur or whole grain couscous
  • 300 g green kale
  • 1/2 orange
  • 1/2 cucumber
  • 1 handful fresh mint
  • 1 handful almonds
  • 1 handful pomegranate seeds

Dressing

  • 1 tbsp. creme fraiche
  • 3 tbsp. olive oil
  • 1 cloves pressed garlic
  • 1/2 tsp. honey
  • 1/2 tsp. salt
  • Pepper

Instructions 

  • Cook the bulgur or couscous according to the package instructions and let it cool.
  • Lightly toast the almonds in a pan or in the oven and let them cool, then chop them coarsely.
  • Wash and finely shred the cabbage. Cut the orange and cucumber into small pieces.
  • Toss the cabbage, orange, and cucumber with the bulgur/couscous, mint, pomegranate seeds, and finally the toasted almonds.
  • Make the dressing by combining all the ingredients in a small bowl or jar and stirring or shaking well. Pour the dressing over the salad just before serving.
