Pancakes are always a winner. They’re easy, kid-friendly, taste amazing, and feel like a real treat. The pancakes only get better with a bit of whole grain added, and we promise that both adults and kids will love them! This recipe doesn't meet the whole grain logo requirements, but it's an opportunity to incorporate more whole grains into your daily routine.

Ingredients

  • 80 g wheat flour
  • 40 g Finely rolled oats
  • 40 g coarse rye flour
  • 2 egg
  • 3 dl milk preferably buttermilk
  • 1 tbsp sugar
  • 2 tsp baking powder with a heaping teaspoon
  • 20 g butter
  • 1 pinch salt

Instructions

  • Eggs, milk, and sugar are whisked together.
  • The butter is melted in the pan and slowly poured into the batter while stirring.
  • Flour, oats, baking powder, and salt are mixed separately and then stirred into the batter. Put about ½ dl of batter on the pan at a time to make approximately 16 small fluffy pancakes.
  • Served with e.g. skyr, syrup, and berries.

Tip

  • For a deluxe breakfast with pancakes, fresh fruit, a whole grain roll, or a slice of toasted rye bread with some good cheese would go well.
