
Bread muffins
Here's a great hack for your weekend! Old toast bread can be transformed into delicious whole grain muffins with eggs, and it tastes fantastic.
Ingredients
- 4 pcs whole grain toast – preferably a day old
- 4 egg
- 1 a handful of fresh spinach
- Olive oil
- Salt and pepper
Instructions
- Preheat the oven to 190 degrees Celsius with fan.
- Trim the edges off the toast bread and roll it flat with a rolling pin. The edges can be saved and baked into croutons to avoid food waste.
- Grease a muffin tin with olive oil, then fold the toast bread into the cups. You can tear them a bit to make them fit better.
- Rinse the spinach and chop it roughly. Sprinkle the spinach into the bread molds.
- Crack an egg into each cup and sprinkle salt and pepper on top.
- Bake until the eggs are cooked to your liking, about 7-10 minutes – keep an eye on them!
- Serve the bread muffins and enjoy them warm.
